Perfect Hamantaschen

Ingredients

  • 4 1/2 c. all-purpose flour, plus more for surface
  • 1 1/2 tsp. baking powder
  • 1 tsp. kosher salt
  • 1 c. (2 sticks) butter, softened
  • 1 c. granulated sugar
  • 3 large eggs
  • 1 tsp. pure vanilla extract
  • 1 (12-oz.) can Solo apricot fruit filling
  • Egg wash

Directions

  • 1In a medium bowl, whisk flour, baking powder, and salt until combined.
  • 2In a large bowl, beat butter and sugar until light and fluffy. Add eggs and vanilla and beat until well combined. Add dry ingredients to the wet and beat until just combined.
  • 3Turn dough onto a piece of plastic wrap and form into a ball. Wrap in plastic and flatten into a disc. Refrigerate until very cold, at least 2 hours and up to overnight.
  • 4Line 2 large baking sheets with parchment paper. On a lightly floured surface roll out one disc of dough into a ¼-inch thick circle. Using a 3 ½ inch round cutter, cut out circles and arrange on prepared baking sheets. Top each circle with a heaping teaspoon of apricot filling in the center. Brush outer circle with egg wash. Bring up three corners and pinch to form a triangle.
  • 5Freeze cookies until firm, about 20 minutes.
  • 6Preheat oven to 375°. Bake until golden on bottom, 12 to 15 minutes. Let cool on a wire rack.
