Traditional Brazilian carrot cake
This is the Brazilian carrot cake. It’s a fun dessert to make. Besides, it tastes great with a cup of coffee!

Ingredients

  • 2 cups (256 grams) all-purpose flour, sifted
  • 1 ½ cup (325 grams) sugar
  • 4 eggs
  • 1 cup (250 milliliters) vegetable oil
  • 2 cups (300 grams) carrots, peeled
  • 1 tablespoon baking powder
  • A pinch of salt

Chocolate glaze

  • ⅓ cup (70 grams) sugar
  • ½ cup (50 grams) chocolate powder, sifted
  • ⅓ cup (80 milliliters) water
  • 1 tablespoon butter

Directions

  • 1Preheat the oven at 350°F/180°C.
  • 2Butter the springform pan and dust flour through it.
  • 3In a large bowl, add the baking powder to the flour and mix the ingredients delicately. Set aside.
  • 4Add the eggs, oil, salt, sugar, and peeled carrots cut in chunks to the blender and blend until it’s homogeneous.
  • 5Pour the mixture into the large bowl with flour and mix gently until all flour has incorporated.
  • 6Pour the batter into the springform pan and bake it for approximately 50 minutes.
  • 7Once you’re done, remove the cake from the oven and let it cool down for 10-15 minutes before removing the springform pan.
  • 8For making the chocolate glaze, add the chocolate powder, sugar, butter, and water to a small non-stick pan.
  • 9Over medium heat, stir the mixture continually until it starts to boil.
  • 10Once it boils, keep stirring for 1-2 more minutes, and as soon as the sauce starts to let go of the bottom, remove it from the heat.
  • 11Remove the springform pan and pour the chocolate sauce onto the cake.
  • 12Serve it with a cup of coffee and enjoy!
