Gluten-free chickpea flour cookies


  • 2 t chickpea flour
  • 1/2 t cassava starch
  • 1 tbsp coconut oil
  • 3 tbsp olive oil / sunflower / corn
  • 1/2 t cold water
  • Salt


  • 1In a bowl we mix all the dry ingredients.
  • 2We add the oils, water and flavors that we are going to add. These have curry, paprika, pepper, grated garlic, a little rosemary and parsley, sesame and sunflower
  • 3We form the dough. It should be sticky, because chickpea flour continues to absorb liquid and after a while it becomes more malleable
  • 4Let the dough rest 30 minutes, stretch with cassava starch and cut the cookies with a thickness of 3 mm approx
  • 5Bake 20 minutes at 180 degrees.
  • 6When they are dry but still barely soft we take them out
