Apple coffee cake

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 tbsp butter melted
  • 1/3 cup brown sugar
  • 1 egg
  • 1/2 cup (+ 1 tbsp) plain yogurt
  • 1 small apple peeled, cored and diced

Topping/Crumb

  • 1 tbsp butter melted
  • 1 tbsp all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup rolled oats
  • 1/4 tsp ground cinnamon optional

Directions

40 minutes
  • 1Grease a 8 1/2in x 4 1/2in (21cm x 11cm) loaf pan. You could also use waxed paper.
  • 2Preheat the oven to 350F (180C).
  • 3Prepare topping first. Mix melted butter, brown sugar, oats, flour and cinnamon (if using) in a small bowl and set aside.
  • 4Mix butter and sugar together until smooth. Add egg and continue to mix. Add yogurt and mix well.
  • 5Add flour and baking powder. Mix well.
  • 6Stir in apples gently and avoid over mixing.
  • 7Pour mixture into prepared pan and sprinkle topping on the top.
  • 8Bake for 25 mnuites minutes or until tooth pick inserted in the center comes out clean.
