Fluffy lime coffee cake



  • 1/4 cup unsalted butter softened
  • 1 cup sugar
  • 1 egg
  • 1 medium lime zest only
  • 1 1/4 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup milk any kind of cow's milk

  • 1Grease a 7 inch (18cm) bundt cake pan or a 9 x 5 inch (23cm X12cm) rectangular cake pan with butter or oil.
  • 2Preheat oven to 350F - 180C.
  • 3Place butter, sugar, egg and lime zest in the bowl of a mixer and beat in medium high speed untill fluffy (2 to 3 minutes).
  • 4Stop mixing, add flour, baking powder, salt and milk and start mixing on low speed, increasing the speed untill the batter is smooth.
  • 5Transfer the batter to the pan and bake for aproximately 35 minutes (until a toothpick inserted in the cake comes out clean).
  • 6Remove it from the oven and let it cool completely before taking the cake out of the pan.
