Double chocolate muffins recipe

Ingredients

  • 1 + 134 cups all purpose flour
  • 2/3 cup cocoa powder
  • 1 tbsp baking powder
  • a pinch salt
  • 1 cup brown sugar
  • 5 oz semi sweet chocolate chopped
  • 1 cup buttermilk you can substitute for 1 cup milk + 1 tbsp cider vinegar or white vinegar
  • 6 tbsp vegetable oil
  • 1/2 tsp vanilla extract
  • 2 eggs

Directions

  • 1Preheat oven to 350F (180C).
  • 2If you are not using buttermilk, in a bowl mix milk and vinegar and set aside.
  • 3In a mixing bowl place flour, cocoa powder, baking powder, salt, brown sugar and chopped chocolate. Mix well.
  • 4Add to this mixture, vegetable oil, vanilla extract, eggs and buttermilk (or milk and vinegar mixture). Mix well.
  • 5Pour batter in prepared muffin cups and take them to the oven and bake for around 15 minutes or until a toothpick inserted in the middle of one of the muffins comes out clean (see note 1).
