Chocolate chunk muffins recipe

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 2 tsp vanilla extract
  • 6 tbsp unsalted butter melted
  • 1 cup sour cream
  • 4.2 oz semi-sweet chocolate cut into chunks (you could substitute for milk chocolate if you prefer)

Directions

40 minutes
  • 1Preheat oven to 350F (180C).
  • 2In a bowl mix all dry ingredients.
  • 3Add eggs, vanilla, butter and sour cream (see note 1). Mix well.
  • 4Add chocolate chunks and mix (but don't overmix).
  • 5Pour batter (see note 2) in prepared muffin cups and bake for around 25 minutes, or until muffin tops are lightly golden brown.
