Brazilian cold coconut cake



  • 1 cup sugar
  • 2 cups all-purpose flour
  • 2 eggs
  • 1 cup milk
  • 2 tbsp shredded coconut
  • 1 tbsp baking powder
  • 2 tbsp unsalted butter
  • 14 oz sweetened condensed milk
  • 8 oz coconut milk
  • 1 cup shredded coconut


40 minutes
  • 1Grease a 9in X 13in (23cm X 33cm) cake pan (if you have one a bit smaller, that's fine).
  • 2Using a whisk, mix all ingredients together and then pour it in the pan.
  • 3Bake for around 20 minutes or until a toothpick inserted in center of cake comes out clean. Let cake cool.
  • 4In a small bowl pour the sweetened condensed milk and coconut milk. Mix well.
  • 5Remove cake from pan and pierce the surface with a fork several times.
  • 6Slowly drizzle the cococnut milk/condensed milk mixture on top of the cake.
  • 7Sprinkle the shredded coconut on top of the cake.
  • 8Serve cold.
