Better than ikea swedish meatballs recipe



  • 3 slices bread cut into pieces (crusts removed)
  • 1/2 cup milk
  • 1/2 onion finely chopped
  • 1 tbsp unsalted butter
  • 8 oz ground pork
  • 1 lb ground beef
  • 1 egg
  • 1/8 tsp ground black pepper
  • 1/16 tsp ground nutmeg
  • 1/16 tsp ground cardamom
  • 2 tsp salt
  • Vegetable oil for frying
  • 3 tbsp unsalted butter
  • 1/6 cup all-purpose flour
  • 2 1/2 cups beef stock
  • 3/4 tsp Worcestershire sauce
  • 1/8 cup heavy cream
  • 1/2 tsp apple cider vinegar or white wine vinegar
  • 1/4 tsp salt

  • 1Start by placing the bread in a shallow bowl and pour in the milk. Let it rest.
  • 2Melt butter in a saucepan and add half the onion. Cook until translucent (2 - 3 minutes). Set aside.
  • 3In a large bowl (or baking pan) place drained bread, fried onion, uncooked onion, pork, beef, egg, spices and salt.
  • 4Using your hands, mix everything together.
  • 5Shape the meatballs by grabbing some of the mixture and then roll it in your hands. Set meatballs in a greased baking sheet.
  • 6Add vegetable oil to a large frying pan (enough to cover half meatball). Heat oil to 375F (180C).
  • 7Working in batches (so you do not crowd the pan) place meatballs in oil and let them brown on all sides - turn them every minute or so.
  • 8Remove from oil and set aside.
  • 9In a medium pan melt the butter, wisk in the flour and stir until smooth.
  • 10Cook mixing constantly until you get a light brown color.
  • 11Add beef beef stock, little by little, and stir.
  • 12Add the Worcestershire sauce and heavy cream and stir until you get a silky sauce.
  • 13Add vinegar and salt.
  • 14Bring to a boil.
  • 15Now add the meatballs to the sauce and let them simmer for around 10 minutes. Stir once in a while, but be gentle so the meatballs don't break.
  • 16Serve.
