  • Potatoes diced
  • Vegetable oil for frying - enough to cover the bottom of the pan
  • Salt and pepper to taste I use rainbow peppercorns from Trader Joe's

Directions

40 minutes
  • 1Boil potatoes, but don't let them get too soft.
  • 2Preheat a frying pan with oil. Place the potatoes. You will get a better results if the potatoes are in a single layer. Fry until golden brown.
  • 3Season with salt and pepper.
